Texas-style smoked brisket remains a hot commodity throughout the state.

Like artisan bread and craft beer, variations on the conventional fare of traditional barbecue joints are in vogue, and it’s not unusual to see the cheapest barbecue sandwich on the menu go for $12.

Demand is one of the driving forces behind the price; the steadily climbing price of beef is another, with the cost of brisket going up 300 percent in recent years.
