SAN ANTONIO – Gilbert’s Mexican Restaurant will stay open for now after reaching their fundraising goal over the weekend to avoid closure , the owner announced on Facebook.

Ashley Rodriguez Herrera, the second-generation owner of Gilbert’s Mexican Restaurant, shared the news on Monday night.
Herrera said the restaurant used the funds to pay for enough food and supplies to last at least another week.
“Y’all came through this weekend and showed up and showed out. I couldn’t thank y’all more for everything y’all did this weekend,” said Herrera.
Although the restaurant reached its fundraising goal, Herrera said it still needs further support from the community to remain open.
Herrera announced on Facebook that Gilbert’s Mexican Restaurant will be open on Tuesday.
“We were closing, but with the community’s help and support, I’m able to go ahead and open,” Herrera said.
